THUMBPRINT BISCUITS

A lovely simple recipe created by Amy Wong Kam for us way back in the early days of Ripe. These are foolproof and fun biscuits to make with small kids. Oat bran is full of dietary fibre and adds a lovely flavour to these biscuits, you can find oat bran and spelt flour in health food stores

VEGAN | DF | CONTAINS NUTS (ALMONDS)

Makes 20

1 cup (100g) OAT BRAN
1 cup (100g) GROUND ALMONDS
1 cup (125g) PLAIN SPELT FLOUR or WHOLEMEAL FLOUR
½ cup (125ml) VEGETABLE OIL or COCONUT OIL
½ cup (125ml) MAPLE SYRUP
¼ cup (75g) good quality BERRY or PLUM JAM - more options in the Tip below!
 

Preheat oven to 180°C.

Grease and line a baking tray with baking paper.

In a large mixing bowl combine the oat bran, ground almonds and spelt flour or wholemeal flour. Pour in the oil and maple syrup and mix until well combined.

Roll into walnut sized balls and flatten them slightly, place on the baking tray and using your thump push down to leave a small indentation in the middle of each biscuit. Place half teaspoonful of jam into the indent.

Place in the oven to bake for 12 - 15 minutes. Remove from the oven and allow to cool on the tray for a few minutes before transferring onto a wire rack.

Tip: there are many healthy options for filling for the thumbprints, try popping a piece of banana or some blueberries in them, or nut butter or dark chocolate.
